this poster presents information on how a school in the Rogue Valley can offer more nutritional food choices (reduced sugar, less processed, etc.) by using locally grown food, implementing a different preparation structure, and ultimately how more nutritional food options can sustain children longer when faced with food insecurity at home. The focus of this project will be on Jewett Elementary School, a school that currently provides free breakfast to every student due to the low income bracket of most of the students' households, and on Schneider Children's Center. Schneider Children's Center is in Ashland, Oregon, is funded by SOU, and is small and strongly supported by the community. Due to these factors, Schneider Children's Center can offer an extremely nutritional menu to the children who attend. I analyzed the food budget of Schneider Children's Center to see if any of the structure from their menus can be implemented on a larger scale at Jewett Elementary School.
