How School Gardens Improve Overall Student Health

In today's society children recognize more fast food restaurants than vegetables. A diet low in fruits and vegetables but high in animal products and processed foods has been linked to childhood obesity and diabetes. I wanted to find out if school gardens increased student's overall health. This paper and poster will end up being a literature review. I am currently in the research stage of this process but data so far shows that school gardens increase student's knowledge of food, which they take home to their family. They also gain knowledge in various other disciplines such as science, nutrition, and kitchen skills. Some studies have shown that school gardens improve the behavior and attitude of the students. Preliminary research findings show an overall improvement in student's physical and mental health with the addition of school gardens.
